- 3 Cups (C) water
- 0.7 Ounces (oz) package dry Italian-style salad dressing mix, packaged
- 1 Teaspoon (tsp) dried oregano
- 1 Teaspoon (tsp) dried basil
- 1 Teaspoon (tsp) dried parsley
- 1 Teaspoon (tsp) onion powder
- 1 Teaspoon (tsp) garlic powder
- 1 Whole bay leaf
- 1 Teaspoon (tsp) salt
- 1 Teaspoon (tsp) ground black pepper
- 5 Pounds (lb) rump roast
- 1 Cup (C) red wine
- 4 Whole beef bouillon cubes, packaged
- 4 Cups (C) beef broth
- 1 Tablespoon (tbsp) Italian herbs, dried
- 6 Ounces (oz) pepperoncini, sliced
- 2 Whole red bell peppers, sliced
- 8 Ounces (oz) mushrooms, sliced
- 10 Whole crusty rolls
Steps
- In a saucepan, combine water, Italian-style salad dressing mix, oregano, basil, parsley, onion powder, garlic powder, bay leaf, salt, and black pepper. Stir well and bring to a boil.
- Add red wine, beef bouillon cubes, and beef broth to the saucepan. Stir until the bouillon cubes are dissolved.
- Place the rump roast in a slow cooker. Pour the hot herb mixture over the meat.
- Cover and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours.
- At the 10-hour mark (or 4-hour mark on High), add sliced pepperoncini, red bell peppers, and mushrooms to the slow cooker.
- Once cooked, remove the bay leaf. Shred the beef with a fork and mix it with the vegetables and some of the hot gravy.
- Serve the shredded beef and vegetables on crusty rolls. Optionally, top with provolone cheese and broil for a few minutes until the cheese is melted and bubbly.
