Ingredients

  • 1 Cup Japanese soy sauce
  • 1 Cup brown sugar, packed
  • 0.5 Cup pineapple juice
  • 0.25 Cup sake
  • 0.25 Cup rice vinegar
  • 8 Whole garlic cloves, minced
  • 1 Tablespoon ginger, grated
  • 1 Teaspoon monosodium glutamate (MSG)
  • 0.5 Teaspoon Korean red pepper flakes
  • 0.5 Teaspoon sesame seeds, toasted
  • 2 Pounds chicken wings

Steps

  1. Combine soy sauce, brown sugar, pineapple juice, sake, rice vinegar, garlic, ginger, MSG, red pepper flakes, and sesame seeds in a small saucepan. Bring to a simmer and cook for 10 minutes. Remove from heat and let cool.
  2. Cut the chicken wings at the joint to make drumettes. Place them in a large resealable plastic bag and pour in the cooled sauce. Marinate in the refrigerator for at least 3 hours, or up to overnight.
  3. Preheat the grill to medium heat and lightly oil the grate. Remove the chicken wings from the marinade and grill until lightly browned, about 5 minutes per side.
  4. Pour the marinade into a saucepan and bring to a simmer. Cook for 5 minutes.
  5. Preheat the oven to 350 degrees F (175 degrees C). Arrange the grilled chicken wings in a single layer in a large baking dish and pour the sauce over them.
  6. Bake in the preheated oven, turning and basting frequently, until the wings are browned, about 1 hour.
