Ingredients
- 1 Pound (lb) ground beef
- 1 Pound (lb) ground pork
- 2 Tablespoons (tbsp) olive oil
- 1 Large onion, divided
- 1 Whole green bell pepper, minced
- 1 Whole habanero pepper, minced
- 2 Whole jalapeño peppers, minced
- 3 Cloves garlic, minced
- 3 15 Ounces (oz) cans chili beans, drained
- 1 14.5 Ounces (oz) can diced tomatoes
- 1 12 Ounces (oz) bottle lager-style beer
- 1 8 Ounces (oz) can tomato sauce
- 1 Cup water
- 1 6 Ounces (oz) can tomato paste
- 3 Tablespoons (tbsp) green onion, sliced
- 2 Tablespoons (tbsp) cornmeal
- 0.25 Cup chili powder
- 1 Tablespoon (tbsp) ground cumin
- 1 Tablespoon (tbsp) salt
- 1.5 Teaspoons (tsp) ground black pepper
- 1 Teaspoon (tsp) garlic powder
- 0.5 Teaspoon (tsp) cayenne pepper
- 1 Cup Cheddar cheese, shredded
Steps
- In a large skillet over medium-high heat, cook the ground beef and pork until they are crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
- In a large pot, heat the olive oil over medium heat. Add 3/4 of the divided onion, green bell pepper, habanero pepper, jalapeño peppers, and garlic. Cook and stir until the onion is softened and translucent, about 5 minutes.
- Add the cooked beef and pork to the pot with the onion mixture. Stir in the chili beans, diced tomatoes, beer, tomato sauce, water, tomato paste, and green onion.
- Sprinkle the mixture with cornmeal, then season with chili powder, cumin, salt, black pepper, garlic powder, and cayenne pepper. Stir well to combine.
- Bring the chili to a simmer over medium heat, then reduce the heat to medium-low. Allow it to simmer for at least 2 hours, stirring occasionally.
- After simmering, refrigerate the chili for 8 hours or overnight to enhance the flavors.
