Ingredients

  • 2 Pounds (lb) boneless lamb shoulder, sliced
  • 0.5 Teaspoons (tsp) garam masala
  • 1 Pinch salt, to taste
  • 2 Tablespoons (tbsp) butter, divided
  • 1 Whole onion, minced
  • 0.5 Teaspoons (tsp) ground turmeric
  • 0.5 Teaspoons (tsp) ginger, minced
  • 0.5 Teaspoons (tsp) garlic, minced
  • 1 Pinch cayenne pepper, to taste
  • 1 Tablespoon (tbsp) tomato paste
  • 1 Cup water
  • 0.5 Cup heavy cream
  • 1 Tablespoon (tbsp) honey
  • 1 Cup fresh cilantro, torn

Steps

  1. Season the lamb pieces with garam masala and salt.
  2. Heat 1 tablespoon of butter in a large skillet over medium heat. Add the lamb cubes and fry until browned, stirring constantly. Remove from the skillet and set aside.
  3. Melt the remaining butter in the same skillet over medium heat. Add the minced onion and cook, stirring, until the onion has softened and turned translucent, about 5 minutes.
  4. Stir in the turmeric, ginger, and garlic. Cook and stir for 1 minute.
  5. Add the cayenne pepper and tomato paste, stirring until well blended. Pour in the water and bring to a simmer.
  6. Return the lamb to the skillet. Simmer over low heat for about 20 minutes, or until the lamb is tender.
  7. Stir in the heavy cream and honey.
  8. Transfer the dish to a serving platter and garnish with torn fresh cilantro.
