- 0.5 Cups fresh parsley, torn
- 2 Tablespoons Dijon mustard
- 4 Cloves garlic, minced
- 2 Teaspoons olive oil
- 1 Teaspoon rosemary, ground
- 0.75 Teaspoon pepper, ground
- 0.5 Teaspoon salt
- 1.5 Pounds small red potatoes, divided
- 1 3.5 Pounds whole chicken, tenderized
Steps
- Preheat the oven to 350 degrees F (175 degrees C).
- Squeeze 3 tablespoons of juice from the lemons and reserve the squeezed lemon halves.
- In a small bowl, combine the lemon juice, parsley, mustard, garlic, olive oil, rosemary, black pepper, and salt. Blend well.
- Toss the halved potatoes with 2 tablespoons of the parsley mixture in a large bowl and set aside.
- Gently slide your fingers between the skin and meat of the chicken to loosen the skin. Spoon the remaining parsley mixture between the skin and meat. Secure the breast skin with toothpicks if necessary.
- Place the reserved lemon halves inside the cavity of the chicken.
- Place the chicken on a rack in a roasting pan.
- Bake the chicken in the preheated oven for 30 minutes.
- Arrange the potatoes around the chicken and continue baking until the chicken juices run clear, about an additional hour.
- Allow the chicken to rest for 10 minutes before serving.
