Ingredients

- 55 Whole vanilla wafers, crushed
- 6 Tablespoons (tbsp) butter, melted
- 20 Whole lemon drop candies, divided

- 4 Large egg yolks
- 0.5 Cups fresh lemon juice
- 5 Teaspoons (tsp) lemon zest, zested
- 2 Tablespoons (tbsp) white sugar
- 4 Large egg whites
- 0.125 Teaspoons (tsp) cream of tartar
- 0.75 Cups white sugar
- 1.5 Cups whipping cream, whipped
- Decoration:
- 0.5 Cups whipping cream, whipped
- 3 Tablespoons (tbsp) light corn syrup
Steps
- Prepare the Crust: Combine the crushed vanilla wafers with melted butter and 1/4 cup of the lemon drop candies. Mix well and press into the bottom of a 9-inch springform pan. Refrigerate while you prepare the filling.
- Make the Filling: Whisk together the egg yolks, lemon juice, lemon zest, and 2 tablespoons of sugar until smooth. In a separate bowl, beat the egg whites until foamy. Add the cream of tartar and continue whipping until soft peaks form. Gradually add 3/4 cup of sugar while whipping to stiff peaks.
- Combine Mixtures: Fold the egg yolk mixture into the egg whites, then gently fold in the whipped cream until no streaks remain. Spoon this mixture into the chilled crust and place it in the freezer.
- Decorate the Mousse: Whip the remaining 1/2 cup of whipping cream until it starts to thicken. Gradually add the light corn syrup and continue beating until stiff. Using a pastry bag, pipe the whipped cream onto the mousse in a decorative pattern. Sprinkle the top with the reserved lemon drop candy.
