Ingredients

  • 0.25 Cups (c) olive oil
  • 0.25 Cups (c) soy sauce
  • 1 Medium lemon, juiced
  • 3 Cloves garlic, minced
  • 1 Teaspoon (tsp) dried oregano
  • 3 Pounds (lb) pork tenderloin, cubed
  • 2 Medium yellow onions, sliced
  • 2 Medium green bell peppers, sliced
  • Skewers (as needed)

Steps

  1. Gather all ingredients.
  2. In a large glass bowl, mix olive oil, soy sauce, lemon juice, minced garlic, and dried oregano.
  3. Add the pork cubes, sliced onions, and sliced bell peppers to the marinade. Stir until all pieces are well coated. Cover the bowl and refrigerate for 2 to 3 hours.
  4. Preheat an outdoor grill to medium-high heat and lightly oil the grate.
  5. Remove the pork and vegetables from the marinade, shaking off any excess. Thread them onto skewers, alternating between pork, onion, and bell pepper pieces. Discard any remaining marinade.
  6. Grill the skewers on the preheated grill, turning frequently, for 10 to 15 minutes. Ensure the pork is no longer pink in the center and reaches an internal temperature of at least 145 degrees F (63 degrees C).
