Ingredients

  • 5 Pounds (lb) pears, peeled
  • 0.5 Cups (cup) water
  • 2 Cups (cup) brown sugar, packed
  • 2 Teaspoons (tsp) lemon zest, grated
  • 0.25 Teaspoon (tsp) nutmeg, ground
  • 1 Teaspoon (tsp) almond extract
  • 2 Tablespoons (tbsp) limoncello liqueur

Steps

  1. Place the diced pears and water into a pot or large saucepan. Cook over medium heat until the pears are soft, about 30 minutes. Meanwhile, sterilize six half-pint jars and keep them warm.
  2. Transfer the softened pears to a food processor and pulse until they reach your desired consistency. Return the mixture to the pan.
  3. Stir in the brown sugar, lemon zest, nutmeg, almond extract, and limoncello. Cook over medium-low heat, stirring occasionally, until the mixture thickens to a butter-like consistency, about 1 hour.
  4. Ladle the pear butter into the sterile jars, leaving 1/4 inch headspace. Seal with lids and rings.
  5. Process the jars in a hot water bath for 10 minutes to ensure a proper seal.
