Ingredients

  • 2 Tablespoons (tbsp) olive oil
  • 2 Cloves garlic, minced
  • 2 Pounds (lb) fresh green beans, sliced
  • 3 Cups canned diced tomatoes
  • 1 Tablespoon (tbsp) fresh chives, minced
  • 3 Tablespoons (tbsp) pine nuts
  • 2 Tablespoons (tbsp) lemon juice
  • 1 Whole bay leaf
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. Heat the olive oil in a large saucepan over medium heat. Add the minced garlic and cook, stirring, until fragrant, about 2 minutes. Be careful not to let the garlic brown; reduce heat if necessary.
  2. Add the sliced green beans to the saucepan and continue to cook and stir until they are bright green but not quite tender, about 4 minutes.
  3. Mix in the canned diced tomatoes, lemon juice, and pine nuts. Season with minced chives, bay leaf, salt, and pepper.
  4. Bring the mixture to a boil, stirring often. Reduce the heat and let it simmer gently, uncovered, for 25 to 30 minutes.
  5. Before serving, remove and discard the bay leaf. Enjoy your zesty lemon green beans with pine nuts and tomatoes!
