Ingredients

  • 1 Bunch asparagus, trimmed
  • 2 Tablespoons (tbsp) tahini
  • 1 Tablespoon (tbsp) water
  • 2 Tablespoons (tbsp) lemon juice
  • 1 Clove garlic, minced
  • 1 Pinch white sugar, to taste
  • 0.75 Pounds (lb) red cabbage, sliced
  • 2 Whole radishes, sliced
  • 2 Whole green onions, sliced
  • 2 Tablespoons (tbsp) feta, crumbled
  • 0.25 Cups pine nuts, toasted
  • 2 Sprigs dill, torn

Steps

  1. Bring a large pot of salted water to a boil over high heat. Blanch the asparagus until just tender, then drain and immediately plunge into ice water to stop the cooking process. Once cold, drain and slice the asparagus diagonally into 1-inch pieces.
  2. In a small bowl, mix together the tahini, water, lemon juice, and minced garlic. Add sugar to taste and stir until well combined.
  3. In a large bowl, toss together the asparagus, red cabbage, radishes, green onions, feta, pine nuts, and dill. Pour the tahini dressing over the salad and mix to combine. Serve immediately or refrigerate for a couple of hours to allow the flavors to meld.
