- 0.5 Cups vegetable oil
- 0.5 Cups all-purpose flour
- 1 Whole onion, minced
- 1 Clove garlic, minced
- 4 Cups hot water
- 2 Cups celery, sliced
- 1 Bunch green onions, sliced
- 1 Whole green bell pepper, sliced
- 1 Whole red bell pepper, sliced
- 1 Large tomato, minced
- 1 Whole bay leaf
- 0.5 Teaspoon dried thyme
- 2 Pounds shrimp, peeled
- 8 Whole hard-cooked eggs, peeled
- 1 Cup okra, sliced
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
- 0.25 Tablespoons cayenne pepper
- 3 Cups cooked white rice
Steps
- Heat the vegetable oil in a Dutch oven or heavy pan. Stir in the flour to make a roux. Cook, stirring constantly, until the roux is dark brown, being careful not to burn it. Add the minced onion and garlic, cooking until slightly wilted. Whisk in the hot water.
- Stir in the sliced celery, green onions, tomato, green and red bell peppers, okra, bay leaf, dried thyme, salt, ground black pepper, and cayenne pepper. Simmer the mixture for 1 hour.
- Add the peeled shrimp and hard-cooked, peeled eggs to the pot. Simmer for an additional 15 to 20 minutes. Adjust the seasoning to taste.
