Ingredients
- 1 Tablespoon (tbsp) vegetable oil
- 1 Whole onion, sliced
- 2 Whole mangos, peeled
- 2 Tablespoons (tbsp) lemon juice
- 1 Tablespoon (tbsp) white sugar
- 0.25 Teaspoons (tsp) ginger, ground
- 0.125 Teaspoons (tsp) cinnamon, ground
- 0.125 Teaspoons (tsp) mace, ground
- 4 Whole chicken breast halves
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 1 Tablespoon (tbsp) vegetable oil
- 0.25 Cups pecans, chopped
Steps
- Heat 1 tablespoon of vegetable oil in a large saucepan over medium heat. Add the sliced onion and cook, stirring, until the onion softens and turns translucent, about 5 minutes.
- Add the cubed mangos, lemon juice, sugar, ginger, cinnamon, and mace to the saucepan. Bring to a simmer and cook for 5 minutes, stirring constantly. Reduce the heat to low, cover, and allow to cook for an additional 5 minutes.
- While the mango sauce is simmering, season the chicken breasts with salt and pepper to taste.
- Heat the remaining 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the chicken and cook on both sides until nicely browned and no longer pink in the center, about 8 minutes per side.
- To serve, place one or two pieces of chicken onto each serving plate. Spoon the mango sauce over the top and sprinkle with chopped pecans.
