Ingredients

  • 3 Whole acorn squash, halved
  • 5 Tablespoons (tbsp) butter, softened
  • 0.5 Cups brown sugar
  • 0.5 Cups all-purpose flour
  • 0.5 Cups pecans, minced
  • 2 Whole eggs
  • 0.5 Cups white sugar
  • 0.25 Cups half-and-half
  • 1 Teaspoon (tsp) vanilla extract
  • 0.5 Teaspoon (tsp) salt

Steps

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Roast the squash cut-side up on a baking sheet in the preheated oven until the flesh is soft, about 50 minutes. Remove from the oven and let cool. Scoop the flesh into a mixing bowl or the bowl of a food processor.
  3. Meanwhile, prepare the topping by mixing 2 1/2 tablespoons of butter in a medium bowl with brown sugar and flour until crumbly. Stir in the pecans and set aside.
  4. Lower the oven temperature to 350 degrees F (175 degrees C). Lightly grease an 11x7-inch baking dish.
  5. Beat or process the squash flesh until smooth. Add eggs, white sugar, half-and-half, remaining 2 1/2 tablespoons of butter, vanilla, and salt; process until well-blended. Spoon the mixture into the prepared baking dish. Sprinkle the brown sugar topping mixture over the squash.
  6. Bake in the preheated oven until the topping is lightly brown, about 40 minutes.
