- 3 Whole acorn squash, halved
- 5 Tablespoons (tbsp) butter, softened
- 0.5 Cups brown sugar
- 0.5 Cups all-purpose flour
- 0.5 Cups pecans, minced
- 2 Whole eggs
- 0.5 Cups white sugar
- 0.25 Cups half-and-half
- 1 Teaspoon (tsp) vanilla extract
- 0.5 Teaspoon (tsp) salt
Steps
- Preheat the oven to 400 degrees F (200 degrees C).
- Roast the squash cut-side up on a baking sheet in the preheated oven until the flesh is soft, about 50 minutes. Remove from the oven and let cool. Scoop the flesh into a mixing bowl or the bowl of a food processor.
- Meanwhile, prepare the topping by mixing 2 1/2 tablespoons of butter in a medium bowl with brown sugar and flour until crumbly. Stir in the pecans and set aside.
