  • 0.5 Cups mayonnaise
  • 4 Cloves garlic, minced
  • 1 Cup feta cheese, crumbled and divided
  • 1 Whole (12 inch) pizza crust, pre-packaged
  • 0.5 Cups sun-dried tomatoes, drained and shredded
  • 1 Tablespoon oil from sun-dried tomatoes
  • 0.25 Cups Kalamata olives, drained and minced
  • 1 Teaspoon oregano, dried
  • 2 Cups baby spinach leaves, torn
  • 0.5 Small red onion, sliced

Steps

  1. Preheat your oven to 450°F (232°C) and adjust the oven rack to the lowest position.
  2. In a small bowl, mix together the mayonnaise, minced garlic, and 0.5 cup of crumbled feta cheese.
  3. Place the pre-packaged pizza crust on a cookie sheet. Spread the mayonnaise mixture evenly over the crust.
  4. Top the pizza with the shredded sun-dried tomatoes, minced Kalamata olives, and dried oregano.
  5. Bake the pizza in the oven for about 10 minutes, or until it is heated through and the crust is crisp.
  6. In a separate bowl, toss the torn baby spinach leaves and sliced red onion with 1 tablespoon of the oil from the sun-dried tomatoes.
  7. Remove the pizza from the oven and top it with the spinach mixture and the remaining 0.5 cup of crumbled feta cheese.
