  • 8 Ounces (oz) swordfish steak, tenderized
  • 1 Tablespoon (tbsp) olive oil
  • 1 Tablespoon (tbsp) fresh lemon juice
  • 1 Teaspoon (tsp) olive oil
  • 1 Clove garlic, minced
  • 2 Cups fresh spinach, torn
  • 0.25 Cups feta cheese, crumbled
  • 0.25 Teaspoon (tsp) onion powder
  • 0.25 Teaspoon (tsp) garlic powder
  • 0.25 Teaspoon (tsp) California garlic salt
  • 2 Tablespoons (tbsp) black olives, minced
  • 2 Tablespoons (tbsp) orange bell pepper, minced
  • 2 Pats butter
  • 2 Lemon wedges

Steps

  1. Preheat an outdoor grill for high heat and lightly oil the grate. Alternatively, preheat your oven to 350°F (175°C) for baking.
  2. Cut a slit in the swordfish steak to create a pocket, leaving one side open.
  3. In a small bowl, mix 1 tablespoon of olive oil with the lemon juice. Brush this mixture over both sides of the fish. Season with onion powder, garlic powder, and California garlic salt. Set aside.
  4. Heat 1 teaspoon of olive oil in a small skillet over medium heat. Add minced garlic and cook until fragrant. Add spinach and cook until wilted. Remove from heat.
  5. In a bowl, combine the wilted spinach, crumbled feta, minced black olives, and minced orange bell pepper. Stuff this mixture into the pocket of the swordfish.
  6. If grilling, place the stuffed swordfish on the preheated grill and cook for 8 minutes on one side. Turn over and continue cooking until the fish is cooked through and an instant-read thermometer reads 145°F (63°C).
  7. If baking, place the stuffed swordfish in a baking dish. Bake for 20 minutes, then add two pats of butter on top and broil for an additional 2-3 minutes until the top is golden and the fish is cooked through.
  8. Serve the swordfish with lemon wedges on the side for an extra burst of flavor. Enjoy your Mediterranean feast!
