Ingredients
- 1 Whole sweet potato, peeled
- 1 Medium eggplant, sliced
- 1 Whole green bell pepper, minced
- 1 Whole red bell pepper, minced
- 2 Whole carrots, minced
- 1 Whole onion, minced
- 6 Tablespoons (tbsp) olive oil, divided
- 3 Cloves garlic, minced
- 1 Teaspoon (tsp) turmeric, ground
- 1 Tablespoon (tbsp) curry powder
- 1 Teaspoon (tsp) cinnamon, ground
- 0.75 Tablespoon (tbsp) sea salt
- 0.75 Teaspoon (tsp) cayenne pepper
- 15 Ounces (oz) garbanzo beans, drained
- 0.25 Cup almonds, blanched
- 1 Whole zucchini, sliced
- 2 Tablespoons (tbsp) raisins
- 1 Cup orange juice
- 10 Ounces (oz) spinach
Steps
- In a large Dutch oven, combine sweet potato, eggplant, green and red bell peppers, carrots, onion, and 3 tablespoons of olive oil. Sauté over medium heat for 5 minutes.
- In a medium saucepan, heat the remaining 3 tablespoons of olive oil. Add garlic, turmeric, curry powder, cinnamon, sea salt, and cayenne pepper. Sauté over medium heat for 3 minutes.
- Pour the garlic and spice mixture into the Dutch oven with the vegetables. Add garbanzo beans, almonds, zucchini, raisins, and orange juice. Cover and simmer for 20 minutes.
- Add spinach to the pot and cook for an additional 5 minutes. Serve hot over rice. Enjoy!
