Ingredients

  • 1 Whole sweet potato, peeled
  • 1 Medium eggplant, sliced
  • 1 Whole green bell pepper, minced
  • 1 Whole red bell pepper, minced
  • 2 Whole carrots, minced
  • 1 Whole onion, minced
  • 6 Tablespoons (tbsp) olive oil, divided
  • 3 Cloves garlic, minced
  • 1 Teaspoon (tsp) turmeric, ground
  • 1 Tablespoon (tbsp) curry powder
  • 1 Teaspoon (tsp) cinnamon, ground
  • 0.75 Tablespoon (tbsp) sea salt
  • 0.75 Teaspoon (tsp) cayenne pepper
  • 15 Ounces (oz) garbanzo beans, drained
  • 0.25 Cup almonds, blanched
  • 1 Whole zucchini, sliced
  • 2 Tablespoons (tbsp) raisins
  • 1 Cup orange juice
  • 10 Ounces (oz) spinach

Steps

  1. In a large Dutch oven, combine sweet potato, eggplant, green and red bell peppers, carrots, onion, and 3 tablespoons of olive oil. Sauté over medium heat for 5 minutes.
  2. In a medium saucepan, heat the remaining 3 tablespoons of olive oil. Add garlic, turmeric, curry powder, cinnamon, sea salt, and cayenne pepper. Sauté over medium heat for 3 minutes.
  3. Pour the garlic and spice mixture into the Dutch oven with the vegetables. Add garbanzo beans, almonds, zucchini, raisins, and orange juice. Cover and simmer for 20 minutes.
  4. Add spinach to the pot and cook for an additional 5 minutes. Serve hot over rice. Enjoy!
