  • 2 Cups yellow squash, diced
  • 3 Cups prepared cornbread, crumbled
  • 11.5 Ounces (oz) condensed cream of chicken soup
  • 1 Cup Cheddar cheese, shredded
  • 0.5 Cup onion, minced
  • 0.5 Cup celery, minced
  • 0.5 Cup margarine, softened
  • 1 Large egg
  • 1 Tablespoon white sugar
  • 1 Teaspoon dried sage
  • 0.5 Teaspoon salt
  • 1 Pinch black pepper, ground

Steps

  1. Preheat the oven to 350°F (175°C). Lightly spray a medium baking dish with floured cooking spray.
  2. Place the diced yellow squash in a pot with enough water to cover. Bring to a boil and cook until tender, about 5 minutes.
  3. Drain the squash and transfer it to a large bowl. Add the crumbled cornbread, condensed cream of chicken soup, 0.5 cup of shredded Cheddar cheese, minced onion, minced celery, softened margarine, egg, sugar, dried sage, salt, and ground black pepper. Mix until well combined.
  4. Transfer the mixture to the prepared baking dish.
  5. Bake in the preheated oven for 45 minutes.
  6. Top with the remaining 0.5 cup of shredded Cheddar cheese and continue baking until the cheese is melted and bubbly, about 15 minutes.
