- 1 Tablespoon (tbsp) olive oil
- 4 Pieces skinless, boneless chicken thighs, sliced
- 1 Whole onion, sliced
- 2 Cups dashi stock
- 0.25 Cups soy sauce
- 3 Tablespoons (tbsp) mirin
- 3 Tablespoons (tbsp) brown sugar
- 4 Large eggs, whisked
- 4 Cups hot cooked white rice
Steps
- Heat the olive oil in a large skillet over medium heat. Add the sliced chicken and cook until they begin to brown, about 5 minutes. Add the sliced onion and continue to cook, stirring occasionally, until the onion becomes translucent, about 5 more minutes.
- Pour in the dashi stock, then whisk in the soy sauce, mirin, and brown sugar. Stir until the sugar has dissolved. Bring the mixture to a boil, then reduce the heat and let it simmer until slightly reduced, about 10 minutes.
- In a separate bowl, whisk the eggs until well-beaten. Pour the eggs into the hot stock mixture in the skillet. Cover the skillet, reduce the heat, and steam until the eggs are cooked, about 5 minutes. Remove from heat.
- Divide the hot cooked rice among 4 deep soup bowls. Top each bowl with an equal portion of the chicken and egg mixture. Serve immediately.
