- 6 Whole sweet potatoes, peeled and sliced
- 16 Ounces (oz) peach slices, thawed
- 4 Tablespoons (tbsp) butter, sliced
- 1 Tablespoon (tbsp) lemon juice
- 0.5 Cups brown sugar
- 0.5 Teaspoons (tsp) ginger, ground
- 1 Pinch salt, to taste
- 0.25 Cups coffee flavored liqueur (optional)
- 0.5 Cups pecans, chopped
Steps
- Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Arrange half of the sweet potato slices in the bottom of the prepared baking dish. Layer with half of the peach slices and dot with half of the butter.
- Repeat the layering with the remaining sweet potatoes and peach slices. Sprinkle with lemon juice.
- In a small bowl, combine the brown sugar, ground ginger, and salt. Mix well.
- Sprinkle the sugar mixture over the layered sweet potatoes and peaches. Dot the casserole with the remaining butter and pour in the liqueur if using. Cover the dish with aluminum foil.
- Bake in the preheated oven for about 1 hour, or until the sweet potatoes are tender.
- Remove the foil, sprinkle with chopped pecans, and continue baking for an additional 10 to 15 minutes, until the pecans are toasted and fragrant.
- Serve warm and enjoy!
Cook's Note: You may substitute orange liqueur, like Grand Marnier®, for the Kahlua® if you prefer.
