Ingredients
- 1.5 Cups creamy peanut butter
- 0.5 Cups unsalted butter, softened
- 1 Teaspoon vanilla extract
- 4 Cups confectioners' sugar
- 2.5 Cups semisweet chocolate chips
- 2 Tablespoons shortening
Steps
- In a mixing bowl, beat together the peanut butter, softened butter, and vanilla extract until creamy. Gradually mix in the confectioners' sugar until fully incorporated. The mixture will be stiff.
- Shape the mixture into small balls and place them onto a wax paper-covered baking sheet. Refrigerate until firm, about 30 to 60 minutes.
- In the top of a double boiler over simmering water, combine the chocolate chips and shortening. Stir frequently, scraping down the sides with a rubber spatula to prevent scorching, until the chocolate is melted, approximately 5 minutes.
- Using a toothpick, dip each peanut butter ball into the melted chocolate, coating all but a small area at the top. Return the dipped balls to the baking sheet, remove the toothpick, and smooth over the toothpick mark. Repeat with the remaining balls.
- Refrigerate the chocolate-coated balls again until the chocolate is firm, at least 30 minutes. Enjoy your delicious Buckeye Cookies!
