Ingredients
- 1 - 14.1 Ounces (oz) package double-crust pie pastry, packaged
- 0.5 - Cups white sugar
- 3 - Tablespoons (tbsp) all-purpose flour
- 1 - Teaspoon (tsp) cinnamon, ground
- 1 - Teaspoon (tsp) lemon, zested
- 0.25 - Teaspoon (tsp) salt
- 5 - Cups pears, peeled
- 1 - Tablespoon (tbsp) butter
- 1 - Tablespoon (tbsp) lemon juice
Steps
- Preheat the oven to 450 degrees F (230 degrees C). Place a baking sheet on the bottom oven rack. Line the bottom and sides of a 9-inch pie plate with one pie crust. Set the second crust aside.
- In a mixing bowl, combine sugar, flour, ground cinnamon, lemon zest, and salt.
- Arrange the peeled pears in layers in the prepared crust, sprinkling the sugar mixture over each layer. Dot with butter and sprinkle with lemon juice.
- Moisten the rim of the bottom crust with some water, then cover the filling with the remaining pie crust. Flute the edges to seal, trim off excess pastry, and cut several slits in the top crust to allow steam to escape.
- Bake in the preheated oven on the baking sheet for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and bake until the crust is golden brown and the filling is bubbly, about 35 to 40 minutes longer.
- Allow the pie to cool for several hours before serving for the best results.
