  • 2.5 Cups white sugar
  • 2 Cups persimmon pulp
  • 2 Large eggs, whisked
  • 0.5 Teaspoon baking soda
  • 2 Cups all-purpose flour, sifted
  • 2 Teaspoons baking powder
  • 0.5 Teaspoon cinnamon, ground
  • 0.25 Teaspoon vanilla extract
  • 1 Pinch salt, to taste
  • 2.5 Cups milk
  • 4 Tablespoons butter, melted

Steps

  1. Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  2. In a mixing bowl, combine the white sugar, persimmon pulp, whisked eggs, and baking soda. Mix well until smooth.
  3. Add the sifted flour, baking powder, ground cinnamon, vanilla extract, and salt to the mixture. Pour in the milk and melted butter, stirring until all ingredients are well combined.
  4. Pour the batter into the prepared baking dish.
  5. Bake in the preheated oven for 55 minutes. The pudding will rise during baking but will settle once removed from the oven.
