Ingredients

  • 6 Whole sweet potatoes, peeled
  • 20 Ounces (oz) crushed pineapple, canned
  • 1 Cup packed brown sugar
  • 1 Pinch ground cinnamon
  • 1 Pinch ground ginger
  • 1 Pinch ground nutmeg
  • 1 Pinch ground cloves

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  2. Bring a pot of salted water to a boil. Add the sweet potatoes and cook until they are tender but still firm. Drain and transfer them to a large bowl to cool. Once cooled, peel and quarter the sweet potatoes.
  3. In a saucepan, combine the crushed pineapple, brown sugar, cinnamon, ginger, nutmeg, and cloves. Bring the mixture to a boil, then reduce the heat to simmer.
  4. Arrange the quartered sweet potatoes in a single layer in the prepared baking dish. Pour the pineapple sauce evenly over the sweet potatoes.
  5. Bake in the preheated oven for 45 minutes, or until the sweet potatoes are tender and the sauce is bubbly. Serve warm and enjoy!
