  • 1 Cup pistachios, minced
  • 0.5 Cup bread crumbs
  • 2 Tablespoons Dijon mustard, whisked
  • 2 Tablespoons olive oil
  • 2 Tablespoons honey
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste
  • 2 Large chicken breasts, sliced

Steps

  1. Preheat the oven to 500 degrees F (260 degrees C). Lightly coat a baking sheet with cooking spray.
  2. In a shallow bowl, combine the minced pistachios and bread crumbs.
  3. In a separate bowl, whisk together the Dijon mustard, olive oil, honey, salt, and pepper until smooth.
  4. Dip each chicken strip into the Dijon mixture to coat, then dredge in the pistachio mixture until fully covered. Place the coated strips onto the prepared baking sheet.
  5. Place the baking sheet in the preheated oven and immediately reduce the oven temperature to 375 degrees F (190 degrees C).
  6. Bake for about 20 minutes, or until the chicken is no longer pink in the center, the juices run clear, and the coating is golden brown.
