Ingredients

  • 13.8 Ounces (oz) package chicken flavored rice mix, packaged
  • 0.25 Tablespoons (tbsp) butter
  • 5 Cups water
  • 1 Bunch green onions, minced
  • 8 Ounces (oz) can water chestnuts, drained
  • 1 Cup celery, minced
  • 1 Cup cooked chicken breast meat, shredded
  • 0.5 Cups mayonnaise
  • 1 Pinch Worcestershire sauce, to taste
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. In a large saucepan over medium heat, combine the rice-vermicelli mix and butter. Cook and stir until the vermicelli is golden brown.
  2. Slowly stir in the water and seasoning packet from the rice mix; bring to a boil.
  3. Cover the saucepan, reduce heat to medium-low, and simmer until the rice is tender, about 20 to 25 minutes.
  4. Remove from heat and let sit, covered, for 3 to 5 minutes.
  5. Transfer the cooked rice to a large serving bowl and place it in the refrigerator to chill.
  6. Once chilled, add the minced green onions, water chestnuts, celery, shredded chicken, mayonnaise, Worcestershire sauce, salt, and pepper to the rice.
  7. Mix until well combined.
