Serving Size: 4

Cooking Time: 150 minutes

Ingredients

  • 4 Cups (c) rhubarb, diced
  • 0.5 Cups (c) water
  • 0.5 Cups (c) white sugar
  • 4 Cups (c) ice
  • 0.67 Cups (c) tequila
  • 1 Tablespoon (tbsp) lime juice
  • 1 Teaspoon (tsp) lime zest, zested
  • 1 Pinch salt, for rimming glasses (optional)
  • 1 Pinch lime wedges, for garnish

Steps

  1. In a medium saucepan, combine the rhubarb and water. Bring to a simmer over medium heat, then reduce to medium-low. Cover and cook until the rhubarb breaks down and releases its juices, about 15 minutes.
  2. Strain the rhubarb mixture through a fine-mesh sieve into a bowl, pressing the pulp to extract as much juice as possible. Discard the pulp.
  3. Stir the sugar into the hot rhubarb juice until dissolved. Allow the syrup to cool slightly, then refrigerate until very cold, at least 2 hours.
  4. Once the syrup is chilled, prepare your margarita glasses by rimming them with salt (optional).
  5. In a blender, combine the ice, rhubarb syrup, tequila, lime juice, and lime zest. Blend until smooth or to your desired consistency.
  6. Pour the margarita mixture into the prepared glasses. Garnish with lime wedges.
  7. Serve immediately and enjoy the refreshing, sweet-tart flavors of your rhubarb margarita.
