- 1 Pound (lb) semisweet chocolate, melted
- 2 Cups all-purpose flour
- 0.5 Cup Dutch process cocoa powder, sifted

- 1 Teaspoon (tsp) salt
- 10 Tablespoons (tbsp) unsalted butter, softened
- 1.5 Cups brown sugar, packed
- 0.5 Cup white sugar
- 4 Whole eggs, whisked
- 2 Teaspoons (tsp) instant coffee granules
- 2 Teaspoons (tsp) vanilla extract
Steps
- Melt the semisweet chocolate over a double boiler or in the microwave, stirring occasionally until smooth.
- Sift together the flour, cocoa powder, baking powder, and salt; set aside.
- In a medium bowl, cream the butter with white sugar and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the coffee granules and vanilla extract until well blended.
- Stir in the melted chocolate. Using a wooden spoon, stir in the dry ingredients just until everything comes together.
- Cover the dough and let it stand for 35 minutes to allow the chocolate to set up.
- Preheat the oven to 350 degrees F (175 degrees C). Line two cookie sheets with parchment paper.
- Roll the dough into walnut-sized balls or drop by rounded tablespoonfuls onto the prepared cookie sheets, leaving 2 inches between cookies.
- Bake for 8 to 10 minutes in the preheated oven. The cookies will be set, but the centers will still be very soft due to the chocolate.
