Ingredients
- 1 Tablespoon vegetable oil
- 1 Medium onion, minced
- 1 Clove garlic, minced
- 4 Whole tomatoes, minced
- 2 Cups cooked roast beef, shredded
- 1 8 Ounces jar taco sauce, packaged
- 1 4 Ounces can green chile peppers, diced
- 0.5 Teaspoons cumin
- 1 Pinch red pepper flakes, to taste
- 6 7 Inch flour tortillas, packaged
- 1.5 Cups Cheddar cheese, shredded
- 2 Cups lettuce, shredded
Steps
- Heat the vegetable oil in a skillet over medium-high heat. Add the minced onion and minced garlic, cooking until tender and transparent, about 5 minutes.
- Stir in the minced tomatoes, shredded roast beef, taco sauce, diced green chile peppers, cumin, and red pepper flakes (if using). Bring the mixture to a boil.
- Reduce the heat to medium and simmer the mixture uncovered for 25 minutes, or until it thickens.
- Lay the warmed tortillas on a clean, flat surface. Spread approximately 2/3 cup of the beef mixture in the center of each tortilla.
- Evenly sprinkle the shredded Cheddar cheese and shredded lettuce over the beef mixture.
