Ingredients

  • 1 16 Ounces (oz) package dried navy beans, packaged
  • 9 Cups water
  • 1 Pound (lb) bacon, sliced
  • 2 Medium onions, minced
  • 2 Stalks celery, minced
  • 4 Teaspoons (tsp) chicken bouillon
  • 1 Whole bay leaf
  • 0.33 Teaspoons (tsp) salt, seasoned
  • 0.25 Teaspoons (tsp) black pepper, ground
  • 0.125 Teaspoons (tsp) cloves, ground
  • 1 16 Ounces (oz) can diced tomatoes, drained
  • 4 Cups water

Steps

  1. Boil the navy beans in 9 cups of water, then let them sit for one hour. Drain and set aside.
  2. Cook the bacon to your desired texture, then drain, reserving 0.25 cups of the grease. Coarsely chop the bacon.
  3. Add the minced onions and celery to the reserved bacon grease and sauté until soft. Do not drain.
  4. Add the chicken bouillon, 4 cups of water, drained beans, bay leaf, salt, pepper, and ground cloves. Simmer for 2 hours.
  5. Stir in the diced tomatoes with their juice. Serve hot.
