Ingredients

  • 3 Tablespoons (tbsp) vegetable oil
  • 1.5 Pounds (lb) boneless lean beef, cubed
  • 3 Whole garlic cloves, minced
  • 1 Teaspoon (tsp) kosher salt
  • 1 Teaspoon (tsp) ground black pepper
  • 2 Quarts (qt) beef broth
  • 6 Medium carrots, sliced
  • 1 Large yellow onion, minced
  • 4 Stalks celery, sliced
  • 1 Cup barley
  • 0.5 Cup fresh parsley, torn
  • 1 Teaspoon (tsp) dried thyme
  • 2 Whole bay leaves
  • 1 Tablespoon (tbsp) Worcestershire sauce
  • 1 Cube beef bouillon

Steps

  1. Prepare Ingredients: Gather all ingredients and prepare them as specified.
  2. Brown the Beef: Heat the vegetable oil in a skillet over medium-high heat. Add the cubed beef and sauté until browned on all sides, about 5 minutes. Add minced garlic, salt, and pepper, stirring to combine. Transfer the beef mixture to a slow cooker.
  3. Deglaze the Skillet: Add a few tablespoons of beef broth to the skillet. Stir over medium heat, scraping up any browned bits with a spoon. Pour this liquid into the slow cooker.
  4. Combine Ingredients: Add the remaining beef broth, carrots, onion, celery, barley, parsley, bay leaves, Worcestershire sauce, and beef bouillon cube to the slow cooker. Stir to combine.
  5. Slow Cook: Cover and cook on Low for 6 to 8 hours, or until the vegetables and barley are tender.
  6. Finish with Herbs: About 15 minutes before serving, stir in the dried thyme. Adjust seasoning with additional salt and pepper if needed.
  7. Serve: Remove bay leaves before serving. Ladle the soup into bowls and enjoy with crusty bread on the side.
