Ingredients

  • 2 Tablespoons (tbsp) butter, divided
  • 1 Large onion, sliced
  • 6 Whole mushrooms, sliced
  • 1 Teaspoon (tsp) brown sugar
  • 16 Ounces (oz) package potato gnocchi, packaged
  • 20 Large shrimp, peeled
  • 3 Tablespoons (tbsp) reduced-fat sour cream
  • 1 Teaspoon (tsp) paprika
  • 1 Pinch saffron threads
  • 0.25 Cups Parmesan cheese, grated
  • 2 Tablespoons (tbsp) fresh basil, shredded
  • 1 Pinch salt, to taste
  • 1 Pinch black pepper, to taste

Steps

  1. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onion, mushrooms, and brown sugar. Cook, stirring occasionally, until the onions are deeply caramelized, about 10 minutes. Remove from the skillet and set aside.
  2. Meanwhile, bring a large pot of lightly salted water to a boil. Add the gnocchi and cook until they float to the top, about 3 minutes. Drain and set aside.
