  • 1 - Cup apple juice
  • 1 - Cup light brown sugar
  • 1 - Cup kosher salt
  • 2 - Tablespoons (tbsp) dried sage
  • 1 - Pinch peppercorns, whole
  • 4 - Whole red apples, halved
  • 5 - Cloves garlic, crushed
  • 10 - Pounds (lb) ice cubes
  • 1 - 20 Pounds (lb) turkey, thawed
  • 3 - Whole apples, cored and quartered
  • 1 - Whole onion, sliced
  • 3 - Cloves garlic, whole
  • 6 - Whole fresh sage leaves
  • 3 - Tablespoons (tbsp) olive oil

Steps

  1. Gather all ingredients.
  2. In a large stock pot, stir together chicken broth, apple juice, brown sugar, salt, dried sage, and peppercorns. Add apple halves and crushed garlic cloves. Bring to a boil, stirring to dissolve sugar and salt. Remove from heat.
  3. Fill a large food-safe container halfway with ice. Pour the chicken broth mixture over the ice and stir to cool completely.
  4. Gently lower the turkey into the liquid with the breast facing down.
  5. Brine the turkey for 24 to 36 hours, adding ice as needed to keep the brine and turkey cold.
  6. Preheat the oven to 500 degrees F (260 degrees C).
  7. Remove the turkey from the brine, rinse well with cold water, and pat dry with paper towels.
  8. Mix apple quarters, onion slices, whole garlic cloves, and fresh sage leaves in a bowl; loosely stuff into the turkey cavity.
  9. Place the turkey in a shallow roasting pan and lightly coat the skin with olive oil.
  10. Bake in the preheated oven until the skin is golden brown, about 30 minutes.
  11. Reduce heat to 350 degrees F (175 degrees C), cover the turkey with aluminum foil, and continue roasting until no longer pink at the bone and juices run clear, about 6 hours. An instant-read thermometer should read 180 degrees F (85 degrees C) in the thickest part of the thigh.
  12. Remove the turkey from the oven, cover with a doubled sheet of aluminum foil, and let rest for 10 to 15 minutes before slicing.
