- 1 Large yellow onion, sliced
- 1.5 Cups whole kernel yellow corn
- 1 Cup bell pepper, minced
- 3 Whole eggs
- 1 Cup fat-free half-and-half
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 0.5 Cup Parmesan cheese, grated
Steps
- Preheat the oven to 400 degrees Fahrenheit.
- Heat the olive oil in a large skillet over low heat. Add the sliced onion and cook, stirring regularly, until golden and slightly caramelized, about 20 minutes.
- Transfer the caramelized onion to a shallow 9-by-9-inch ovenproof dish. Add the corn and bell pepper.
- In a separate bowl, beat the eggs and stir in the half-and-half. Pour this egg mixture over the vegetables in the dish. Season with salt and pepper, and stir to combine.
- Sprinkle the grated Parmesan cheese on top of the mixture.
- Bake in the preheated oven for 30 to 35 minutes until the pudding is firm.
