- 1 Pound (lb) beef rib-eye steak
- 0.25 Cups shallots, minced
- 1 Teaspoon (tsp) garlic, minced
- 1 Tablespoon (tbsp) soy sauce
- 1 Cup fresh spinach, torn
- 0.5 Cups sun-dried tomato pesto
- 0.5 Cups black olives, sliced
- 0.5 Cups feta cheese, crumbled
- 3 Tablespoons (tbsp) sunflower kernels
- 1 Tablespoon (tbsp) parsley, minced
- 1 Teaspoon (tsp) basil, minced
Steps
- Bring a large pot of lightly salted water to a boil. Add the penne pasta and cook, stirring occasionally, until tender yet firm to the bite, about 8 to 10 minutes. Drain, toss with olive oil, and keep warm.
- Meanwhile, melt 1 tablespoon of butter in a skillet over medium-high heat. Add the rib-eye steak and sear on both sides until rosy-pink in the center, about 7 to 10 minutes depending on thickness. Transfer the steak to a cutting board and cut into bite-sized pieces.
- Melt the remaining 1 tablespoon of butter in the same skillet. Add shallots and garlic; cook until fragrant, about 5 to 10 seconds. Return the steak to the skillet and cook to the desired doneness, about 5 minutes more. Stir in soy sauce and cook until evaporated, about 3 to 5 seconds.
- Off heat, stir in spinach, pesto, olives, feta cheese, sunflower kernels, parsley, and basil. Transfer to a large bowl. Add the pasta, toss, and serve.
