- 3 Tablespoons (tbsp) flour
- 1.5 Cups chicken stock
- 0.5 Cups fat-free half and half
- 0.75 Teaspoons (tsp) salt
- 1 Pinch freshly ground pepper, to taste
- 1.5 Pounds (lb) fresh green beans, trimmed
- Topping:
- 0.67 Cups whole grain croutons, seasoned, crushed
- 0.67 Cups walnuts, chopped
- 2 Tablespoons (tbsp) vegetable spread, melted
- 0.5 Cups onion, minced
Steps
- Melt the vegetable oil spread in a medium saucepan over medium heat. Add the minced mushrooms and minced onion; cook, stirring frequently, for 10 minutes.
- Stir in the flour and continue to cook and stir for 5 minutes more. Slowly add the chicken stock and bring the mixture to a boil; reduce heat and simmer for 10 minutes.
- Stir in the fat-free half and half, and season with salt and freshly ground pepper. Set aside.
- Preheat the oven to 350 degrees F (175 degrees C). Cook the trimmed green beans in boiling water for 5 minutes. Drain well, then add to the mushroom sauce; toss to coat with the mixture.
- Transfer the green bean mixture to an 11 x 7-inch baking dish.
- In a separate bowl, stir together all the topping ingredients until well blended. Sprinkle the topping around the edge of the green beans in the baking dish.
