- 1 Pound (lb) lamb kidneys, divided
- 2 Tablespoons (tbsp) butter
- 2 Pounds (lb) round steak, cubed
- 2 Medium onions, minced
- 2 Teaspoons (tsp) salt, divided
- 2 Teaspoons (tsp) Worcestershire sauce
- 0.5 Teaspoon (tsp) thyme, dried
- 0.25 Teaspoon (tsp) black pepper, ground
- 1 Whole bay leaf
- 2 Cups water, divided
- 4 Cups potatoes, diced
- 6 Tablespoons (tbsp) all-purpose flour
- 1 Recipe pastry for a 9-inch single crust pie
Steps
- Preheat your oven to 375 degrees F (190 degrees C).
- Clean and slice the lamb kidneys, removing any excess fat.
- In a large skillet, melt the butter over medium heat. Add the lamb kidneys and round steak, cooking until browned on all sides.
- Add the minced onions to the skillet and cook until they are translucent.
- Stir in 1 tsp of salt, Worcestershire sauce, thyme, black pepper, and bay leaf. Pour in 1 cup of water and bring to a simmer.
- Cover and let the mixture simmer for about 45 minutes, or until the meat is tender.
- In a separate pot, boil the diced potatoes in the remaining cup of water with 1 tsp of salt until tender. Drain and set aside.
- Remove the bay leaf from the meat mixture. Stir in the flour to thicken the sauce, cooking for an additional 5 minutes.
- Combine the meat mixture with the boiled potatoes, mixing well.
- Roll out the pastry and line a 9-inch pie dish. Fill with the meat and potato mixture.
- Cover with the remaining pastry, sealing the edges. Cut slits in the top to allow steam to escape.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
