Ingredients
- 8 Cups all-purpose flour
- 4 Whole eggs
- 8 Ounces (oz) sour cream
- 0.5 Teaspoon (tsp) salt
- Warm water, 1 cup (estimated based on need during mixing)
- 1 Recipe Sauerkraut Filling
- 1 Recipe Potato Cheese Filling
Steps
- In a large bowl, whisk together the eggs, sour cream, and salt.
- Gradually stir in the flour and warm water, adding water until the dough feels like velvet.
- Turn the dough out onto a lightly floured board and knead until smooth.
- Roll out the dough to a thickness of 1/8 to 1/4 inch.
- Cut out 3 1/2-inch circles using the top of a glass or a biscuit cutter. Cover with waxed paper to prevent drying if not filling immediately.
- Place 1 or 2 tablespoons of your chosen filling on one side of each dough circle.
- Fold the dough over and seal by pressing the edges with a fork. Repeat until all ingredients are used.
- Bring a large pot of water to a boil. Immerse the pierogi and cook until they float to the surface.
- (Optional) To freeze, grease a baking dish with melted butter and top with minced onions. Layer cooked pierogi in the dish, adding more melted butter and onions between layers. When cool, divide into freezer bags. The butter will prevent sticking, and the contents can be reheated in a skillet.
