Ingredients
- 8 Cups all-purpose flour
- 4 Whole eggs
- 8 Ounces (oz) sour cream
- 0.5 Teaspoon (tsp) salt
- 1 Pinch warm water, to taste
- 1 Recipe sauerkraut filling
- 1 Recipe potato cheese filling
Steps
- In a large bowl, beat together the eggs, sour cream, and salt.
- Gradually stir in the flour and warm water, adding water until the dough feels like velvet.
- Turn the dough out onto a lightly floured board and knead until smooth.
- Roll out the dough to a thickness of 1/8 to 1/4 inch.
- Cut out 3 1/2 inch circles using the top of a glass or a biscuit cutter.
- Cover the circles with waxed paper to prevent drying if not filling immediately.
- Place 1 or 2 tablespoons of your chosen filling on one side of each dough circle.
- Fold the dough over and seal the edges by pressing with a fork. Repeat until all ingredients are used.
- Bring a large pot of water to a boil.
- Immerse the pierogi in the boiling water and cook until they float to the surface.
- (Optional) To freeze, grease a baking dish with melted butter and layer cooked pierogi with chopped onions and more melted butter. Cool and divide into freezer bags.
