  • 0.75 Cups butter, melted
  • 2 Whole onions, minced
  • 1 Bunch fresh parsley, minced
  • 2 Cloves garlic, minced
  • 2 14.5 Ounces (oz) stewed tomatoes
  • 2 14.5 Ounces (oz) chicken broth
  • 1.5 Cups white wine
  • 1 Cup water
  • 2 Whole bay leaves
  • 1 Tablespoon (tbsp) dried basil
  • 0.5 Teaspoon (tsp) dried thyme
  • 0.5 Teaspoon (tsp) dried oregano
  • 1.5 Pounds (lb) cod fillets, cubed
  • 1.5 Pounds (lb) large shrimp, peeled
  • 1.5 Pounds (lb) bay scallops
  • 18 Small clams
  • 18 Whole mussels, cleaned
  • 1.5 Cups crabmeat

Steps

  1. Melt the butter in a large stockpot over medium-low heat. Add the minced onions, parsley, and garlic. Cook and stir until the onions are softened, about 3 to 4 minutes.
  2. Add the stewed tomatoes to the pot, breaking them into chunks as you add them. Stir in the chicken broth, white wine, water, bay leaves, basil, thyme, and oregano. Cover the pot and let it simmer for 30 minutes.
  3. Stir in the cubed cod, shrimp, scallops, clams, mussels, and crabmeat. Bring the mixture to a boil, then lower the heat, cover, and simmer until the clams open up, about 5 to 7 minutes.
  4. Ladle the cioppino into bowls and serve immediately. Enjoy with a side of warm, crusty bread.
