Cooking Time: 70 minutes

Ingredients

  • 1 Slice bacon, minced
  • 0.5 Medium onion, minced
  • 0.25 Medium green bell pepper, minced
  • 0.5 Teaspoon (tsp) fresh thyme, minced
  • 0.5 Cup tomato sauce
  • 1 Teaspoon (tsp) browning sauce
  • 1 Teaspoon (tsp) salt
  • 0.5 Teaspoon (tsp) black pepper, ground
  • 1 Pinch red pepper flakes
  • 2 14 Ounces (oz) whole kernel corn, drained
  • 3.5 Cups water
  • 2 Cups white rice

Steps

  1. Heat a large skillet over medium heat. Add the minced bacon and cook until the fat begins to render, stirring occasionally.
  2. Add the minced onion, bell pepper, and thyme to the skillet. Cook, stirring occasionally, until the onion becomes nearly translucent.
  3. Reduce the heat to medium-low and stir in the tomato sauce, browning sauce, salt, ground black pepper, and red pepper flakes. Let it simmer for 3 minutes to meld the flavors.
  4. Add the drained corn to the skillet and continue to simmer for an additional 3 minutes.
  5. Gradually pour in the water while stirring the mixture. Increase the heat to high and add the rice, stirring to combine.
  6. Bring the mixture to a boil, then cover the skillet, reduce the heat to low, and let it simmer until the liquid is absorbed and the rice is tender, about 30 minutes.
  7. Once cooked, fluff the rice mixture with a fork before serving.
