Ingredients

  • 1 Pound (lb) beef, ground
  • 1 Ounce (oz) package taco seasoning mix, packaged
  • 12 5 Inch corn tortillas
  • 1 Cup Monterey Jack cheese, shredded
  • 0.5 Cup onion, minced
  • 2 Cups iceberg lettuce, shredded
  • 1 Large tomato, diced
  • 1 8 Ounce (oz) jar salsa
  • 1 8 Ounce (oz) container sour cream, packaged (Optional)

Steps

  1. Build a campfire and allow it to burn until a bed of coals has formed. Rake the coals into a flat bed on one side of the fire.
  2. In a large skillet over medium-high heat, cook the ground beef until browned, stirring to crumble. Drain excess fat and stir in taco seasoning according to package directions.
  3. Coat the inside of a pie iron with cooking spray. Place one corn tortilla on one side, add a scoop of ground beef, sprinkle with Monterey Jack cheese, and add minced onion. Place another corn tortilla on top and close the pie iron.
  4. Cook the taco over moderate campfire coals until the tortillas are crisp and browned, and the taco is hot in the center.
  5. Serve with shredded lettuce, diced tomato, salsa, and sour cream. Repeat with remaining ingredients.
