Ingredients

  • 2 Pounds (lb) ground beef
  • 1 Pound (lb) bulk hot Italian sausage
  • 5 Tablespoons (tbsp) chili powder
  • 1 Tablespoon (tbsp) cumin, ground
  • 1 Teaspoon (tsp) coriander, ground
  • 1 Large onion, minced
  • 2 Cloves garlic, minced
  • 28 Ounces (oz) diced tomatoes
  • 15 Ounces (oz) tomato sauce
  • 14 Ounces (oz) kidney beans
  • 2 Teaspoons (tsp) chipotle peppers in adobo sauce, minced
  • 1 Teaspoon (tsp) salt
  • 1 Pinch black pepper, to taste
  • 6 Ounces (oz) tomato paste

Steps

  1. In a large pot over medium-high heat, cook the ground beef and sausage until lightly browned and crumbly. Drain excess fat.
  2. Add chili powder, cumin, and coriander to the pot. Cook and stir until the spices are fragrant, about 1 minute.
  3. Stir in the diced onion and minced garlic. Cook and stir until the onion is softened and translucent, about 4 minutes.
  4. Add the diced tomatoes, tomato sauce, kidney beans, chipotle peppers, salt, and black pepper. Bring the mixture to a simmer.
  5. Transfer the chili to a slow cooker and cover.
  6. Cook on Low for 7 to 9 hours.
  7. Stir in the tomato paste and cook for an additional hour.
  8. Serve hot, garnished with your choice of sour cream, sharp Cheddar cheese, and fresh cilantro. Enjoy!
