Ingredients

  • 1 Cup warm water
  • 0.25 Ounce (oz) package active dry yeast
  • 1 Pinch white sugar, to taste
  • 3 1/3 Cups all-purpose flour
  • 1 Tablespoon (tbsp) olive oil
  • 2 Teaspoons (tsp) kosher salt
  • 2 Cloves garlic, minced
  • 1 Tablespoon (tbsp) fresh basil, minced
  • 0.5 Cup olive oil
  • 1 Teaspoon (tsp) garlic, minced
  • 0.25 Cup tomato sauce, divided
  • 1 Cup tomatoes, diced
  • 0.25 Cup black olives, sliced
  • 0.25 Cup roasted red peppers, drained
  • 2 Cups mozzarella cheese, shredded
  • 4 Tablespoons (tbsp) fresh basil, minced

Steps

  1. Prepare the Dough: In a large bowl, dissolve yeast and sugar in warm water. Let it stand until creamy foam forms, about 5 to 10 minutes.
  2. Mix Ingredients: Add flour, olive oil, and salt to the yeast mixture. Mix until the dough pulls away from the bowl's sides.
  3. Knead the Dough: Turn the dough onto a lightly floured surface and knead until smooth, about 8 minutes.
  4. First Rise: Place the dough in a well-oiled bowl, cover with a damp cloth, and let it rise until doubled, about 1 hour.
  5. Flavor the Dough: Punch down the dough, knead in minced garlic and basil, and let it rise again until doubled, about 1 hour.
  6. Prepare Garlic Oil: Combine olive oil and minced garlic in a microwave-safe bowl. Heat for 30 seconds.
  7. Preheat Grill: Preheat an outdoor grill to high heat and brush the grate with garlic oil.
  8. Shape the Dough: Punch down the dough, divide it in half, and shape each half into an oblong shape, 3/8 to 1/2 inch thick.
  9. Grill the Dough: Place one piece of dough on the hot grill. Once the bottom is lightly browned, flip it over using two spatulas.
  10. Brush with Oil: Quickly brush the crust with garlic oil.
  11. Add Toppings: Top with half of the tomato sauce, tomatoes, olives, red peppers, cheese, and basil.
  12. Cook the Pizza: Close the grill lid and cook until the cheese melts. Remove from the grill and let it cool for a few minutes. Repeat with the second piece of dough.
