  • 1 15 Ounces (oz) can tomato sauce
  • 1 15 Ounces (oz) can kidney beans, drained
  • 1 14.5 Ounces (oz) can fire-roasted diced tomatoes
  • 1 Cup dark lager beer
  • 2 Teaspoons (tsp) chili powder
  • 1 Teaspoon (tsp) cumin, ground
  • 0.5 Teaspoon (tsp) coriander, ground
  • 0.5 Teaspoon (tsp) cayenne pepper
  • 0.5 Teaspoon (tsp) garlic powder
  • 0.5 Teaspoon (tsp) kosher salt
  • 0.5 Teaspoon (tsp) black pepper, ground
  • 1 Green bell pepper, minced
  • 1 Red bell pepper, minced
  • 1 Tablespoon (tbsp) tomato paste
  • 1 Cup beef broth
  • 1 Tablespoon (tbsp) Worcestershire sauce
  • 1 Tablespoon (tbsp) brown sugar

Steps

  1. Heat the olive oil in a large saucepan over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Use a wooden spoon to break up the meat as it cooks.
  2. Add the minced onion and garlic to the pan. Sauté until the onion is translucent and fragrant, about 3-4 minutes.
  3. Stir in the tomato paste and cook for an additional 2 minutes to deepen the flavor.
  4. Add the fire-roasted diced tomatoes, tomato sauce, kidney beans, and minced bell peppers to the saucepan. Stir to combine.
  5. Pour in the dark lager beer and beef broth. Stir in the chili powder, cumin, coriander, cayenne pepper, garlic powder, salt, black pepper, Worcestershire sauce, and brown sugar.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 20-25 minutes, stirring occasionally to prevent sticking.
  7. Taste and adjust seasoning if necessary. If you prefer a thicker chili, let it simmer uncovered for an additional 5-10 minutes.
  8. Serve hot, garnished with shredded cheese, sour cream, and chopped green onions if desired. Enjoy with cornbread or over corn chips for a delightful chili pie experience.
