Ingredients

  • 2 Cups white sugar
  • 2 Cups all-purpose flour
  • 1 Teaspoon (tsp) salt
  • 2 Teaspoons (tsp) cinnamon, ground

  • 1.5 Cups vegetable oil
  • 4 Whole eggs
  • 3 Cups carrots, grated
  • 1 Cup walnuts, chopped
  • 3 Ounces (oz) cream cheese
  • 0.25 Cups heavy whipping cream
  • 1 Teaspoon (tsp) vanilla extract
  • 2.5 Cups confectioners' sugar, sifted

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 9 or 10-inch tube pan.
  2. In a large mixing bowl, combine the sugar, flour, salt, cinnamon, and baking soda. Gradually add the vegetable oil while mixing.
  3. With an electric mixer, beat in the eggs one at a time until well incorporated.
  4. Stir in the grated carrots and chopped walnuts. Pour the batter into the prepared baking pan.
  5. Bake in the preheated oven for 1 hour and 20 minutes. If using two 9-inch layer cake pans, adjust the baking time to 40 minutes.
  6. For the frosting, blend the cream cheese and heavy whipping cream with an electric mixer until smooth.
  7. Add the vanilla extract and sifted confectioners' sugar to the cream cheese mixture, blending until the frosting is creamy and smooth.
