Ingredients

  • 0.5 Cups dry lentils
  • 1 Cup water
  • 5 Ounces (oz) stewed tomatoes
  • 0.125 Cups onion, minced
  • 2 Stalks celery, minced
  • 0.25 Teaspoon (tsp) curry powder
  • 3 Cloves garlic, minced
  • 1 Pinch salt, to taste
  • 1 Pinch ground black pepper, to taste

Steps

  1. Combine the dry lentils and water in a pot and bring to a boil.
  2. Lower the heat to a simmer and add the stewed tomatoes, minced onion, and minced celery. Cover the pot and let it simmer for 45 minutes.
  3. Check the stew every 15 minutes to stir and add more water if necessary.
  4. In the last 15 minutes of cooking, add the curry powder, minced garlic, salt, and ground black pepper to taste.
  5. Taste the stew and adjust the spices if necessary before serving.
