Ingredients

  • 1 Tablespoon canola oil
  • 1 Tablespoon canola oil, divided
  • 2 Andouille sausage links, minced
  • 1 Poblano chile, minced
  • 0.5 Red bell pepper, minced
  • 0.5 Large red onion, minced
  • 0.5 Cups corn kernels, packaged
  • 4 Flour tortillas
  • 2 Cups Colby cheese, shredded
  • 0.25 Cups sour cream, optional
  • 0.25 Cups salsa, optional

Steps

  1. Heat 1 tablespoon of canola oil in a large skillet over medium heat. Add the minced sausage, poblano pepper, red bell pepper, red onion, and corn. Cook until the vegetables are soft, about 15 minutes.
  2. Spoon 1/4 of the sausage mixture onto one half of each tortilla. Top each with 1/2 cup of shredded Colby cheese. Fold the tortillas over to create half-moon shapes.
  3. Heat the remaining 1 tablespoon of canola oil in a large skillet over medium heat. Cook the quesadillas until the cheese is melted and the tortillas are brown and crispy, about 5 minutes per side.
  4. Cut each quesadilla into 4 wedges. Serve with sour cream and salsa, if desired.
