  • 3 Large sweet potatoes, peeled
  • 2 Tablespoons (tbsp) cinnamon, divided
  • 0.5 Cups brown sugar, packed
  • 1 Teaspoon (tsp) cayenne pepper
  • 4 Slices bacon
  • 1 16 Ounces (oz) can pineapple chunks, drained
  • 1 Pinch water, as needed
  • 0.5 Cups granulated sugar
  • 0.25 Cups brown sugar, packed

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large saucepan, place the sweet potato pieces and cover with water. Add 1 tablespoon of ground cinnamon. Bring to a boil and cook for 7 to 10 minutes until slightly tender. Drain and set aside.
  3. In a small bowl, mix 0.5 cups of brown sugar with cayenne pepper. Lay the bacon slices in a baking dish and sprinkle the sugar mixture evenly over them.
