Ingredients

  • 2 Cups all-purpose flour
  • 1 Cup butter, chilled
  • 0.5 Cup confectioners' sugar
  • 0.5 Teaspoon chipotle chile powder
  • 0.33 Cup apricot preserves
  • 4 Whole eggs
  • 1.75 Cups white sugar
  • 0.375 Cup lemon juice
  • 0.33 Cup all-purpose flour
  • 1 Teaspoon baking powder
  • 0.25 Teaspoon salt
  • 0.33 Cup confectioners' sugar, sifted
  • 1 Pinch chipotle chile powder, to taste

Steps

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square pan.
  2. In a food processor, combine 2 cups of flour, butter, 0.5 cup confectioners' sugar, and 0.5 teaspoon chipotle chile powder. Pulse until the mixture resembles coarse crumbs. Press the mixture into the prepared pan.
  3. Bake in the preheated oven for 30 minutes, or until firm and golden. Remove from the oven and allow to cool for at least 20 minutes in the pan.
  4. Reduce the oven temperature to 325°F (165°C).
  5. In a small bowl, whisk together the preserves and 0.5 teaspoon chipotle chile powder; spread over the cooled crust.
  6. Whip the eggs with a wire whisk until foamy. Beat in the sugar, lemon juice, and salt until the sugar has dissolved.
  7. Sift together 0.33 cup flour and baking powder; whisk into the egg mixture until smooth. Pour onto the preserve-topped crust.
  8. Bake in the preheated oven for an additional 35 to 40 minutes, until the center of the egg mixture has set.
  9. Sift together 0.33 cup confectioners' sugar with a pinch of chipotle powder, and sprinkle over the hot lemon bars.
  10. Cool completely before cutting into bars.
