- 1.33 Cups white rice
- 2.75 Cups water
- 1 Teaspoon (tsp) salt
- 3 Whole roma tomatoes, minced
- 1.33 Cups corn kernels, drained
- 1 Cup black beans, drained
- 0.25 Cup pine nuts, toasted
- 1 Pinch black pepper, to taste
- 1 Whole red onion, sliced
- 1 Tablespoon (tbsp) lime juice
- 2 Tablespoons (tbsp) cilantro, minced
- 1 Whole lime, sliced
Steps
- In a heavy saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and onion; sauté for 5 minutes, stirring frequently.
- Mix in the minced bell pepper, chili powder, annatto powder, crushed red pepper, ground cumin, and ground cinnamon. Sauté for an additional 2 minutes.
