Ingredients

  • 2 Tablespoons (tbsp) olive oil
  • 3 Cloves garlic, minced
  • 1 Cup onion, minced
  • 1 Whole green bell pepper, minced
  • 1 Tablespoon (tbsp) chili powder
  • 2 Teaspoons (tsp) annatto powder
  • 0.25 Teaspoon (tsp) crushed red pepper
  • 1 Teaspoon (tsp) cumin, ground
  • 0.25 Teaspoon (tsp) cinnamon, ground
  • 1.33 Cups white rice
  • 2.75 Cups water
  • 1 Teaspoon (tsp) salt
  • 3 Whole roma tomatoes, minced
  • 1.33 Cups corn kernels, drained
  • 1 Cup black beans, drained
  • 0.25 Cup pine nuts, toasted
  • 1 Pinch black pepper, to taste
  • 1 Whole red onion, sliced
  • 1 Tablespoon (tbsp) lime juice
  • 2 Tablespoons (tbsp) cilantro, minced
  • 1 Whole lime, sliced

Steps

  1. In a heavy saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and onion; sauté for 5 minutes, stirring frequently.
  2. Mix in the minced bell pepper, chili powder, annatto powder, crushed red pepper, ground cumin, and ground cinnamon. Sauté for an additional 2 minutes.
  3. Add the white rice to the saucepan and stir to coat with the spices.
  4. Pour in the water and add 1 teaspoon of salt. Bring the mixture to a boil over high heat.
  5. Cover the pan, reduce the heat to low, and simmer the rice for 25 minutes until cooked.
  6. Once the rice is cooked, mix in the minced tomatoes, drained corn, drained black beans, and toasted pine nuts.
  7. Stir in black pepper and lime juice. Heat the mixture through.
  8. Serve the rice on plates, topped with sliced red onion and minced cilantro.
  9. Accompany each serving with a slice of lime for squeezing over the rice.
